Salmon Red Curry

Serves 2, Preparation Time: 30 mins

Method

  1. Cut Salmon into 2 pieces for 2 portions.
  2. Heat pan and place salmon skin side down for
    2 minutes. Repeat on the other side.
  3. Remove salmon from pan and place on a serving dish.
  4. Use the pan with the remainder of oil from salmon and stir in the coconut milk with curry paste.
  5. Let the sauce simmer until aroma arises.
  6. Add soy sauce or fish sauce and stir.
  7. Pour sauce over salmon and garnish with Thai sweet basil and kaffir lime leaves, and chillis if you like it hot!!
  8. Serve with plain boiled rice or noodles.
