Barbecued Chicken with Prawns Oven Baked Yellow Chilli Salmon Red Curry Tempura Prawns with Green Chilli
Salmon Red Curry
Serves 2, Preparation Time: 30 mins
Ingredients
- 500g salmon fillet
- 45g Red Curry Paste
- 200ml coconut milk
- 1½ tbsp light soy sauce or 1tbsp fish sauce
Garnish
- 10 Thai sweet basil leaves, finely sliced
- 1 kaffir lime leaf, shredded
- 1 red chilli , deseeded and finely sliced
Method
- Cut Salmon into 2 pieces for 2 portions.
- Heat pan and place salmon skin side down for
2 minutes. Repeat on the other side. - Remove salmon from pan and place on a serving dish.
- Use the pan with the remainder of oil from salmon and stir in the coconut milk with curry paste.
- Let the sauce simmer until aroma arises.
- Add soy sauce or fish sauce and stir.
- Pour sauce over salmon and garnish with Thai sweet basil and kaffir lime leaves, and chillis if you like it hot!!
- Serve with plain boiled rice or noodles.
