Tempura Prawns with Green Chilli & Coriander Salsa
Ingredients
- 15 prawns, shelled and deveined
- Oil for frying
Tempura mix
- 3 tbsp rice flour
- 1 tbsp tapioca flour
- ½ cup of sparkling water
- pinch of salt & pepper
Method
- Mix all ingredients together. Coat the prawns with batter and fry over high heat in oil.
Salsa
- 2 tsp of diced cucumber
- 1&frac; tsp diced carrot
- 1 tsp sliced shallots
- 1tsp coriander leaves, finely chopped
- ½ tsp lime zest
- 3 tbsp Tuk Tuk Foods Green chilli & coriander dipping sauce
Method
- Combine all ingredients together and serve with tempura prawns.
