Rooted in Royalty: Born in Bangkok as the eleventh of twelve children, Tukata’s journey into the culinary world began at the feet of her mother, Thien Tong (Golden Candle.) Trained in the Thai Royal Household, Thien Tong passed down the meticulous arts of pounding, grinding, and blending spices that define royal Thai cuisine.

Bridging Two Worlds: When Tukata arrived in Britain, she saw an opportunity to introduce the authentic flavors of her home to a new audience. In 1994, she opened the Mai Thai Noodle Bar, cooking in a brave, open-concept kitchen to demystify Thai cooking for the public. Her secret? Fusing traditional Thai techniques with fresh, local organic produce.
